Paleo Berry Glazed Crockpot Chicken



With fall brings crockpot season! I always forget how much I love my crockpot until cool weather rolls around. I tend to be a messy cook. I try to clean while cooking and still end up with a huge mess in my kitchen. This is where the crockpot comes in. Everything goes into one pot and out comes an amazing dinner! I used Juli from PaleOMG jam recipe with fresh blackberries instead of raspberries. You can use store bought blackberry jam just check the ingredients! I ate this over a baked sweet potato, and it was the perfect meal. Serves 2-3 but easily doubles for a bigger group! Also in completely unrelated news, basketball season is here!! Well sort of. Colligate basketball programs were officially allowed to start practicing this past Saturday. I just want to warn any readers that semi-frequent basketball updates might be coming soon. Ingredients
2 chicken breasts

Glaze
1/4 cup + 1/2 tbls honey
1/3 cup coconut aminos
1 tbls olive oil
2 tbls blackberry-blueberry jam
1 tsp almond butter
1/2 tsp cider vinegar
1/2 tsp toasted sesame oil
2 garlic cloves, minced
1/4 cup sweet onion, diced
1/8 tsp crushed red pepper
sesame seeds, topping 

Directions
In a bowl mix all glaze ingredients together in a bowl. Turn crockpot to low and place chicken in bottom. Pour sauce ingredients over chicken. Cook for 3 hours. Flip chicken and cook for another hour. 

Remove chicken from crockpot. Pour sauce into small sauce pot over medium heat. Bring to a boil then reduce to a simmer and cook for 20 minutes until sauce reduces. While the sauce is cooking, shred chicken with two forks. Toss chicken with sauce and serve with a sprinkle of sesame seeds.
