Four Things

Thank goodness the weekend is finally here. Between my blog being deleted and flight delays, this week has dragged on. Thankfully my blog is back up and running! I love this blog. I pour everything into it and to see it just disappear felt slightly devastating. After 30 hours of back and forth communication with Blogger and attempting to fix my blogs settings, my blog was finally restored!

In other news, March Madness got off to a crazy start yesterday! My alma mater, the University of Kansas, plays today. It is pretty much a given that I will pick KU to win it all each year. I don’t think I could live with myself if I didn’t pick them to win and then they did!

Plaid & Paleo St. Paddy's Week Recap

Happy St. Paddy’s Day! To conclude St. Paddy’s Week on Plaid & Paleo. I’ve rounded up my Irish-themed posts. I’m celebrating in New Orleans. I love this city. There is so much history, gorgeous southern architecture and delicious food. I’m not ready to go back to reality!

Paleo Matcha Green Tea Thumbprint Cookies

Bonus recipe for St. Paddy’s Week on Plaid and Paleo. If you couldn’t tell, I’m very excited about this celebration. While St. Paddy’s Day isn’t nearly as crazy as Mardi Gras in New Orleans, I’ve been promised plenty of parades and celebration!

Four Things

I’m in New Orleans for the weekend and already loving this city! There is just so much going on. The first order of business was a drive-thru daiquiri. So not paleo but so worth it! I can’t wait to explore more of the city.

Paleo Coriander Pork Chops

So I haven’t had pork chops in about six years. I stopped eating pork and red meat in 2008. I thought I was doing the “healthy” thing in regards to the red meat and fatty bacon. On the other hand, I didn’t mind giving up all other pork products.

Paleo Mini Beignets

I’m so excited for my first trip to New Orleans in a couple weeks! One of my good friends from college moved there over the summer, and I’m going to stay with her for a week. I got my first taste of Mardi Gras when she face timed me yesterday.

Crockpot Chipotle Chicken

I love how easy it is to cook chicken in the crockpot. I have a couple chicken crockpot recipes on my blog (here, here, here). I am constantly trying to think of ways to cut down on kitchen time, and I always go back to my crockpot. You can make so many things in a crockpot. It is pretty crazy!

Paleo Oscar Party Foods

So a little known fact. I was actually in the move industry for a couple years. I love movies especially independents! I love throwing themed parties, and what better way to throw an Oscar party than to serve foods inspired by the movies up for Best Picture!

Paleo Cranberry Pesto Meatballs with Butternut Squash Mash

I’m recovering from a whirlwind trip to Austin, Texas. Just a little fyi a 14-hour round trip car ride isn’t the best idea for a weekend trip. Granted it was only supposed to 6 hours each way, but we ran into a little issue with the highway being closed on the way there which tacked on two extra hours!

Cinnamon Apple Kombucha

I started off my home brewing journey in mid-December. I was nervous about buying a scoby online so I decided to follow Steph from Stupid Easy Paleo’s instructions here on how to grow your own.

Paleo Sweet Pepper Chili

So I guess winter is sticking around after all. Don’t worry I have an official countdown to spring. Only 31 days to go. So close yet so far away. I got a little winter relief with a short vacation to the gulf.

Paleo Strawberry Cream Cheese Pancake Stack

Valentine’s Day is one day away people! If you have someone special, I hope you already made plans. I’ll be spending the day eating chocolate, drinking wine and thinking about how much I miss the beach. My one true love.

Paleo Sun-dried Tomato & Artichoke Stuffed Chicken

My life feels a little boring right now. Time seems to slow down in the winter. The monotonous days of cold and snow drag with no end. Grey skies block out the sun giving the landscape a dreary outlook. I miss LA winter. It isn’t even a real winter, which is why I love it the best.

Paleo Cranberry Chia Cups

The weekend has once again come and gone. No surprise there. It happens every single week, and every single week I am surprised how quickly the weekend flies by. The snow from last week still hasn’t melted leaving me feeling trapped indoors.

Paleo Chocolate Raspberry Jellies

I have to say it. I am not a huge fan of Valentine’s Day. I don’t hate it, but I don’t love it either. I have too many “favorite” holidays, and Valentines simply doesn’t make the cut. For me there is too much hype. Too much pressure for it to be an amazing day.

Paleo Umami Brussels Sprouts

I feel like it has been forever since I did a vegetable post. Okay so I did post the bloomin’ onion a couple days ago. Evidently my memory isn’t to hot right now. I blame the weather. I’ve lost track of my days with all the snow.

Paleo Chorizo Breakfast Burrito with Avocado Cream

Sunday was one of my favorite holidays. Nope I’m not talking about the Super Bowl. I do love the Super bowl, but I love this “holiday” more. Can you guess what it is? Groundhog’s Day. It is probably one of the most random holidays, but I have been a fan for years.

Paleo Spicy n' Sweet Blood Orange Wings

Superbowl countdown is on. I’d love the attend the game some day, but preferably when it is in a warm location like Miami. I love NYC, but I’m not sure how I feel about sitting outside for 3+ hours to watch a football game. During college, I could barely handle November games in Kansas.
