Happy St. Paddy’s Day! To conclude St. Paddy’s Week on Plaid & Paleo. I’ve rounded up my Irish-themed posts. I’m celebrating in New Orleans. I love this city. There is so much history, gorgeous southern architecture and delicious food. I’m not ready to go back to reality!

Paleo Spicy n' Sweet Blood Orange Wings

Superbowl countdown is on. I’d love the attend the game some day, but preferably when it is in a warm location like Miami. I love NYC, but I’m not sure how I feel about sitting outside for 3+ hours to watch a football game. During college, I could barely handle November games in Kansas.

Paleo Chicken, Squash and Mushroom Stew

I am pretty sure I stored enough food away on Thanksgiving to hold me over until spring. Ok not really. But I did get pretty full. This year was my second paleo-Thanksgiving, and it was even better than last year.

Paleo Gingerbread Chia Pudding

After going without cable for more than a year, TV is back in my life. I have no clue what days the shows I actually watch are even on, so most of the time I end up watching them on-demand. There is one channel that constantly airs “quality” television. The Food Network.

Paleo Indian Spiced Roasted Chicken

This weekend I attended my first book club meet up. Now this might not sound like everyone’s cup of tea, but it is right up my alley. Next to cooking I love reading. I set a New Year’s Resolution to read 100 books in 2013.

Paleo Caramelized Onion and Bacon Purple Mashed Potatoes

Thanksgiving is only a couple short weeks away! This year I want to mix up the standard Thanksgiving sides. I was stoked when I came across these little purple potatoes at my local grocery store. I did a little research and from what I’ve found purple potatoes stem from the sweet potato family.

Paleo Double Chocolate Pumpkin Mug Cake

I wish I never learned to make a mug cake. Since I stumbled upon PaleOMG’s mug cake recipe a couple weeks ago, I’ve had to exhibit extreme self-control not to make one every day.

Paleo Spicy Mustard Crockpot Chicken

I have been giving my crockpot some serious loving these last few weeks. Everything goes into one pot and out comes dinner! When you live alone, cooking an extravagant meal for one isn’t very appealing. Most of the time the clean up takes just as long as the actual cooking.

Sometimes naming recipes is hard. Sometimes I try to be cheeky. Sometimes I go for the more obvious. Who knew such a simple thing could be so difficult?

No Bake Paleo Pumpkin Cookies

Yeah more pumpkin! This weekend I went to the pumpkin patch with my friend in Orange County. I haven’t been to a pumpkin patch in years, and it was so much fun! Pumpkins as far as the eye can see! After an hour of walking around, we both settled on a couple of pumpkins.

Paleo Butternut Squash Lasagna with Cashew Cheese

Sometimes I really miss Italian food. It is probably the hardest cuisine to convert to Paleo. I used to gorge myself on fettuccine alfredo. Now I can’t imagine eating such a heavy dish.

This is one of two recipes where I put my cajun spice mix to use. From the results, there will be many more occasions for this spice blend. I have a serious urge to put it on everything I make!

Paleo Triple Citrus Ceviche

So my last post was basically an ode to fall. Let’s do a little 180. I go about 50/50 on if I like shrimp. It is so weird. Sometimes I love it. Other times I can’t stand the texture.

S-s-summertime, summertime sadness. While I am sad summer is technically over, fall brings the best food of any season. One of my all time favorite holidays is Thanksgiving. Yes thanksgiving is still a ways off, but it doesn’t mean you can’t start celebrating early.

Paleo Authentic Creamed Spinach

When I was younger, you couldn’t pay me to eat spinach. I didn’t like the taste at all. Cooked spinach was the absolute worst, but somewhere along the line something changed. Spinach isn’t the only vegetable I now love that used to hate.
