Paleo Fried Rice and AAG Orange Chicken


I love finding new recipes and trying them out. I recently bought Danielle’s Against All Grain cookbook (here) and was instantly in love. There is page after page of delicious recipes that I can’t wait to make! First on my list was her crockpot orange chicken. OMG yum! This recipe is amazing. Not only is is super easy, but it tastes amazing! 

After coming down from my orange chicken high, I needed to cook a side to pair with the chicken. I whipped up cauliflower fried rice that stood its own beside the delicious orange chicken. 


Ingredients
1 head of cauliflower
4 Tbls coconut aminos
2 tsp toasted sesame seed oil
1 inch fresh ginger, grated 
1/2 cup white onion, diced 
1 tsp ghee
2 eggs
1 Tbls olive oil

Directions
Remove the cauliflower stem and cut into chunks that will fit in your blender or food processor. Pulse a couple times until the cauliflower reaches a “rice” like consistency. Heat large skillet over medium-high heat and melt ghee. Cook onions until transparent. Add cauliflower, coconut aminos, sesame oil and ginger. Stir until cauliflower is evenly coated. Cover and cook for 5 minutes. Beat eggs in a separate bowl. Remove lid and push cauliflower mixture aside. Add eggs in clean space and scramble with wooden spoon. Once eggs are cooked, mix in with other ingredients. Add in olive oil and stir to fry the rice. Recover and cook for 5 more minutes. 

Serve with AAG Orange Chicken.
