Paleo Coriander Pork Chops

So I haven’t had pork chops in about six years. I stopped eating pork and red meat in 2008. I thought I was doing the “healthy” thing in regards to the red meat and fatty bacon. On the other hand, I didn’t mind giving up all other pork products.

Crockpot Chipotle Chicken

I love how easy it is to cook chicken in the crockpot. I have a couple chicken crockpot recipes on my blog (here, here, here). I am constantly trying to think of ways to cut down on kitchen time, and I always go back to my crockpot. You can make so many things in a crockpot. It is pretty crazy!

Paleo Cranberry Pesto Meatballs with Butternut Squash Mash

I’m recovering from a whirlwind trip to Austin, Texas. Just a little fyi a 14-hour round trip car ride isn’t the best idea for a weekend trip. Granted it was only supposed to 6 hours each way, but we ran into a little issue with the highway being closed on the way there which tacked on two extra hours!

Paleo Sweet Pepper Chili

So I guess winter is sticking around after all. Don’t worry I have an official countdown to spring. Only 31 days to go. So close yet so far away. I got a little winter relief with a short vacation to the gulf.

Paleo Sun-dried Tomato & Artichoke Stuffed Chicken

My life feels a little boring right now. Time seems to slow down in the winter. The monotonous days of cold and snow drag with no end. Grey skies block out the sun giving the landscape a dreary outlook. I miss LA winter. It isn’t even a real winter, which is why I love it the best.

Paleo Chicken Tetrazzini

Ok so I can’t keep it a secret anymore. Well I wasn’t really hiding it, but I was too nervous to jinx anything. Yesterday I got lasik eye surgery. For the first time in almost two decades, I can see without glasses or contacts. I simultaneously want to scream joyously at the top of my lungs and cry my eyes out.

Paleo Spiced Crispy Pork Belly

I’m currently curing my own bacon and cannot wait to put it into the smoker. When I purchased my pork belly I got a big piece. I don’t even know if you could call it a piece. More like half a piggy. Thirteen pounds worth.

Paleo Pot Roast

I’m on Whole30 day five!! Yeah! Only 25 more days. Ha not that I am counting down or anything. So yesterday I went a little crazy in the kitchen. I made Primal Palate gut healing gummies, Balanced Bites gummies, Elana’s Pantry apricot energy bars, Multiply Delicious fruity granola bars, all-natural deodorant, a dry face stick and started fermenting my own kombucha.

My little blog passed it’s six-month anniversary a couple weeks ago. The time has gone by so quickly. I truly love sharing my cooking creations. This year has brought a lot of ups and downs, but I wouldn’t have wanted it any other way.

Paleo Prime Rib Seasoning

It’s Christmas Eve’s Eve. Yup I said it. In my family, Christmas Eve is almost as important as Christmas Day. We open all our presents on Christmas Eve, and it is awesome! For years I made my friends jealous by being able to open my Christmas presents a whole 12 hours before them.

Paleo Chicken Marsala

The first time I ate chicken marsala was after losing a bet to a friend. If I won the bet, he had to make me dinner but if I lost I had to make dinner. Needless to say I lost. I made a really, really bad bet. I’m almost too embarrassed to say but you can share in my humiliation.

Paleo BBQ Lil Smokies

Ok so that name is kind of a lie. I searched and searched for lil smokies without any weird ingredients but came up completely empty! All were filled with sugar, soy and weird ingredients I couldn’t pronounce. If you aren't familiar with the goodness that is lil smokies, they are also called cocktail smokies, cocktail links and cocktail weiners.

Simple Oven Dill Salmon

I’m going slightly stir crazy. I’m still in Oklahoma, snowed in and carless. It’s been years since I’ve been snowed in, and now I remember exactly why I moved somewhere without snow. Snow is pretty to look at and fun to ski in, but I hate driving in snow.

Paleo Creamy Chicken Pasta

I’m still trying to come to term with the fact Christmas is less than three weeks away. I can’t say I am a fan of holiday shopping. Don’t get me wrong I love picking out presents for my friends and family; however, I hate braving the crowds of holiday shoppers. People get crazy this time of year!

Paleo Cranberry Turkey Meatballs

This past weekend, I helped pick out my family’s Christmas tree from a local tree farm. We used to do this every year, but the tradition has fallen to the wayside. After much convincing, we set off to pick out the perfect tree.

Paleo Chicken, Squash and Mushroom Stew

I am pretty sure I stored enough food away on Thanksgiving to hold me over until spring. Ok not really. But I did get pretty full. This year was my second paleo-Thanksgiving, and it was even better than last year.

Hearty Paleo Braised Short Ribs

After seeing lots of recipes for braised meats, I really wanted to give it a try. I had my heart set on oxtail, but I couldn’t find any in stock so I settled for short-ribs. Well I’m glad I had to settled because this was one of my favorite beef dishes I’ve ever made.

Paleo Pumpkin Cashew Chicken

S-s-summertime, summertime sadness. While I am sad summer is technically over, fall brings the best food of any season. One of my all time favorite holidays is Thanksgiving. Yes thanksgiving is still a ways off, but it doesn’t mean you can’t start celebrating early.

Paleo Roasted Artichokes on Zucchini Noodles with Lemon Garlic Sauce

Keeping on the straight and narrow isn’t always so easy. I went hard core Paleo for the first seven months then something happened and little cheats started creeping back into my diet. Soon I had fallen completely off the wagon.
