Paleo Turkey Sliders with Sweet Potato “bun” topped with Garlic-Cilantro Aioli


Okay so the name is a bit ridiculous, but it's hard to leave anything out because all the different ingredients combined to make this dish so good. Whenever I buy ground turkey, my fall back is always taco salad. Forcing myself out of this rut, I took inventory of ingredients I had on hand and decided to whip up some burgers. To my great surprise these turned out better than I could have imagined. I used my leftover Paleo mayo from the day before and added in garlic and cilantro for the aioli, which turned out to be drool worthy. One of my favorite things about paleo is the fact you can create almost anything. It forces me out of the easy aka unhealthy meals to discover new meals which are actually just as easy but 10 times healthier! 

Ingredients
Patties
1 lb ground turkey or beef
1/2 shallot, diced
Ghee or coconut oil for cooking

Extras
1 round-ish sweet potato, peeled
1/2 red onion, sliced into rounds

Garlic-Cilantro Aioli
Leftover paleo mayo (recipe here)
2 garlic cloves, minced
1 Tbls cilantro, diced 

Directions
Combine ground turkey, worcestershire sauce and shallot in a bowl. Make sure not to over work. Form burgers into 3 inch diameter patties with a small divot in the middle. Heat grill or skillet to medium heat. Lightly coat with ghee or coconut oil. Place patties on grill for 4 minutes, or until the sides start to turn brown. Flip (only once!) and cook for 2-3 more minutes. Once burgers are done, place onions on hot grill to soften. After a minute, flip for one more minute then remove. 

Cut sweet potatoes vertically into disks. Brush with coconut oil and place into oven at 350 degrees for ten minutes. Flip and return for 10 more minutes. 

Finally for aioli. Take your leftover mayo and simply stir in the minced garlic and cilantro. Assemble burgers with sweet potato “bun” on bottom, turkey burger, grilled onions and topped with the aioli.
