Yeah I’m so excited it is Christmas Eve! Christmas Eve is the main event at my house. We open all our presents on Christmas Eve except the things Santa brought us in our stockings. I have four very young nieces and nephews who are firm believers in Santa.

Paleo Sweet Potato Casserole

When I first started eating paleo, I ate a ton of sweet potatoes. Before this I never ate sweet potatoes other than Thanksgiving. I am not sure why, but I always associated them as being sickly sweet. This probably stems from marshmallow covered sweet potato casserole.
