Paleo Sweet Potato Casserole


When I first started eating paleo, I ate a ton of sweet potatoes. Before this I never ate sweet potatoes other than Thanksgiving. I am not sure why, but I always associated them as being sickly sweet. This probably stems from marshmallow covered sweet potato casserole.

I spent the weekend relaxing. By relaxing, I mean staying up until 1:30AM Saturday night to shop Phillip Lim for Target. With bleary eyes from staring at my computer screen for almost four hours in nervous anticipation, I snatched up the bag I’d been eyeing! Totally worth it!
